2020 Viento

Our medium-bodied 2020 Viento could have been bottled with a Cabernet Franc label, as it is mostly Cabernet Franc. There’s plenty of dark fruit (cherry and plum), vanilla, butterscotch, tobacco, and pepper spice notes – with a hint of roasted chili pepper thrown in “to boot." The wine has juicy acidity and a lingering dry finish.

2020 was a very, very nice growing year. We experienced our biggest harvest ever due to our recent plantings' fruit yield. We believe the quality of the 2020 is better than 2019, which was superb! While not as concentrated or as huge as the 2019s, the 2020 reds are showing lovely concentration. We were able to make our Crumbling Rock, Leaf Stone, and other premium reds as well as bring back customer favorites like Rolling Hills and Viento. Cheers to a very solid year: good concentration, very nice wines.

Winemaker Notes
Once the fruit is picked, de-stemmed, and crushed, the berries, juice, pulp and seeds all go into a stainless steel fermentation tank. Once the tanks are filled, we run off or "bleed" a portion of the juice, which can be anywhere from 15% to 40% if the total juice volume. This bleeding process allows for a greater skin to juice ratio in our primary wines, which helps to increase depth, richness, and concentration. This bleed juice is fermented separately. The remaining juice will rest cool for a few days to extract as much color and flavor as possible. The juice will then ferment at a warm 80-90 degrees with frequent "pump overs" to provide for even extraction. Once fermentation is complete, the wine is drained out of the tanks and put into oak barrels for malolactic fermentation and aging.
