"This wine still has plenty of life left in it. Given that it was amazing on day 3 implies as much to me.  I’d say another 3 years before it peaks and then a couple more before it starts to decline  maybe even longer since the aromas and flavors and color were all fresh and youthful!" - Karen Cool

"I made myself a dinner featuring a lot of mushrooms and thought a Syrah would pair nicely, and thought I'd pull out the almost 6 year old Phyllite to see how it is evolving.  The wine is still vibrant and fresh and beautifully balanced (and paired very well, indeed!).  The wine fully involves the mouth from start to its long pepper spice finish.  Complex aromas and flavors: tobacco, pencil box and graphite mingle with dark plum, dark berries (blueberry, blackberry), black currant, and black cherry while hints of baking spice and black olive flirt with the senses." - Karen Cool
